Look no further!
Here are eight easy vegan sandwich ideas you can count on to satisfy your basic sandwich needs.
Most take less than 15 minutes to prepare and can be made with ingredients found in your pantry or refrigerator. And the best part? They can be enjoyed at any time of day!
1. Grilled Vegetable Sandwich

Here’s a wonderful way to use your leftover roasted or grilled vegetables.
Ingredients:
Hummus for the spread (I used a hummus made with Kalamata olives)
Grilled or roasted vegetables cut into thin layers (I used grilled zucchini, red bell peppers, and mushrooms)
Avocado slices
Cucumber slices
Salt & pepper to taste
Serve on focaccia, a ciabatta roll, or sliced bread of choice. You can toast the bread first, if desired. For this sandwich, I used fresh rosemary focaccia sliced between the top and bottom.
2. Tofu Scramble Breakfast Sandwich

I’m not a huge tofu person, but this sandwich makes me rethink that position! This is the perfect breakfast sandwich and will fill you up until it’s time for lunch.
Ingredients:
Hummus for the spread
Baby Spinach
Avocado
Tofu Scramble (try my recipe – it’s amazing!)
Salt & pepper to taste
Served on a toasted slice of ciabatta and serve.
3. Avocado and Tomato Sandwich

Avocado and tomato sandwiches are a classic and old-time favorite. This one never disappoints and is perfect for a quick breakfast, lunch, or even dinner. Top with chopped nuts for some added crunch and protein!
Ingredients:
Hummus or a vegan mayo like Veganaise for the spread
Basil (if in season) or baby spinach
Avocado slices
Sliced Tomato
Chopped nuts (I used cashews but try almonds, walnuts or pistachios)
Salt & Pepper to taste
Serve open-faced on a slice of wholegrain toast or a half of a bagel for an all-around healthy meal.
4. Mushroom and Sundried Tomato Sandwich

Sundried tomatoes are some of my favorite vegan ingredients. They add another depth of flavor, and the beautiful red color makes this sandwich a feast for the eyes!
Ingredients:
Hummus or a vegan mayo spread like Veganaise
Sauteed garlic, sliced mushroom, and onions (saute in olive oil or vegetable broth)
Sundried tomatoes – sliced into strips
Arugula (or spinach if that’s what you have available)
Salt & pepper to taste
Stack on a slice of toasted fresh sourdough bread, and enjoy!
5. Chickpea and Spinach Sandwich

How is it even possible that a plant-based vegan sandwich can be so good? But it is and you’re going to love this one! The chickpea and spinach sandwich is the perfect sandwich for lunch or dinner, and it’s a wonderful addition to any picnic or barbecue.
Try spreading the mixture on small toasted slices of bread, and serve as an appetizer – your friends will be hooked too!
Ingredients:
Mashed avocado for the spread
Diced garlic, chickpeas, and spinach, cooked over medium heat in olive oil
Add some salt, chili powder, and garlic powder to spice it up
Drain any excess liquids before spreading on the bread
Enjoy with any type of bread – and toast first, if desired.
6. Fresh Veggie Sandwich

Do you follow the Daily Dozen Challenge by Dr. Michael Greger and his Nutrition Facts Organization? If so, then get creative with this sandwich and see if you can stuff a full dozen items into this one sandwich!
This is the probably easiest of all my easy vegan sandwiches as it’s the most versatile. Just use fresh veggies on your bread of choice, and use whatever spread and toppings you have available. Here are some ideas:
Ingredients:
Smear your favorite spread over the bread. Ideas are: hummus, vegan mayo, peanut butter, almond butter, smashed avocado, guacamole, or oil and vinegar.
Add sliced vegetables (ie onion, mushrooms, green/yellow/red bell pepper, zucchini, cucumber, tomato, beets, grated carrots, jalapenos, olives, garlic).
Top with: sprouts, salt and/or pepper, fresh herbs like cilantro, parsley, basil, oregano, thyme, or marjoram, crushed nuts for texture and additional protein.
Use on your bread of choice: any bread roll, ciabatta, focaccia, bagel, whole grain bread, white or wheat bread, etc.

7. Beet and Avocado Sandwich

Don’t you think avocado is one of mother nature’s best gift to us? In my opinion, the avocado is one of the best foods on the planet, and it is a key ingredient in this colorful and vitamin-packed sandwich.
Ingredients:
Vegan mayo for the spread (like Veganaise)
Beet slices – can be canned or fresh (baked until soft)
Avocado
Greens (like lettuce, sprouts, chopped cilantro or other herbs)
Salt and pepper to taste
Serve on a fresh or toasted bun or slice of French bread – it’s fantastic!!
8. Peanut butter, jam, and banana sandwich

Elvis Presley helped make the peanut butter and banana sandwich combo famous, And according to Southern Living’s interview with Elvis’s personal chef, Mary Jenkins Langston, this Rock and Roll legend liked his peanut butter and banana sandwiches fried in lots and lots of butter.
Elvis craved this rich sandwich often, and it wasn’t unusual for Ms. Langston to make them for his breakfast or even a midnight or early morning snack.
Here is another version of Elvis Presley’s favorite sandwich, with a sweet addition. This is a very quick and easy vegan sandwich, perfect for that in-between meals snack!
Ingredients:
Peanut butter (creamy or crunchy)
Jam of choice
Sliced bananas
Enjoy on whole-grain or seeded bread for that added crunch and protein.
And if you want to be like Elvis, you can easily grill this sandwich in a frying pan over medium heat. Just use a vegan butter like Miyoko’s or Earth Balance, and turn on your favorite Elvis song, and enjoy!!
