Easy vegan spicy broccoli and mushroom noodles

I love these easy spicy broccoli and mushroom noodles! In only 15 minutes you have sutch a flavorful, hot meal. Perfect if you’re on the go or just not in the mood to cook but want something other than a sandwich.

To be completely honest with you, I usually just use the 2-minute noodle packs from the supermarket. They have the vegan ones with soy sauce there and since I don’t have thick soy sauce at home, I get that with the pack. But this is not very eco-friendly, so I might look for thick soy sauce and bigger noodle packs once Spanish confinement loosens up a bit more and I can go to the supermarket I want.

Tips for preparing spicy vegan broccoli and mushroom noodles

First of all, these broccoli and mushroom noodles are quite spicy, so if you’re not used to this much spice, cut down on the chili or even skip it. The ginger will spice it up alone.

To hurry up prep time, I usually cot the veggies straight into the frying pan instead of a chopping board. Except for the chili (when I remember) because once you get chili in on your fingers you can’t touch your eyes all day. I did this mistake just the other day as I wanted to make it super quick and didn’t want to clean the chopping board. Bad choice.

If you don’t have mini corn, leave them out. I use them because they add nice color to the dish, they only need heating, and I like them.

Ingredients

  • 90 gram noodles of your choice I often just use a 2-minute noodle pack as I always have them in the house
  • 1 charlotte onion
  • 1 clove garlic
  • 1 handful chopped broccoli
  • 3 white button mushrooms
  • 1 fresh chili
  • 1/2 lemon
  • 1 tea spoon grated ginger
  • 1 spoonful chopped coriander
  • 4 mini corns
  • 1 tablespoon thick soy sauce (if you don't have this, just supplement with an extra tablespoon of normal soy sauce – I get the thick soy sauce from the noodle packs I buy)
  • 1 tablespoon soy sauce
  • Olive oil to fry vegetables

Instructions

  • Chop charlotte onion and garlic and set to fry up in olive oil, stir regularly so it doesn't burn.
  • Fill up water in a pot and set to boil
  • Chop up broccoli and mushroom and add to the pan. Remember to stir regularly.
  • Grate ginger, chop the chili and add to the stir fry
  • When the water boils, add the noodles in the water (you can salt the water but not necessary as the soy sauce will flavor the noodles). Leave to boil for a couple of minutes.
  • Meanwhile, cut up the mini corn in 2-3 pieces each and add to the stir fry
  • Squeeze the lemon in the stir fry, add a spoonful of soy sauce and stir well
  • Drain the water of the noodles and leave to drain while you chop the coriander
  • Add the noodles to the stir fry
  • Add the thick soy sauce and blend well
  • Add the chopped coriander at the end and stir again and it's ready to serve

How to serve spicy vegan broccoli and mushroom noodles

These noodles are perfect to eat as is when you’re on the go, but can also make a good match with garlic bread or a side avocado salad.

If it’s a cold day, these can easily be made as noodle soup by cooking up the noodles in water and mixing in a bowl with the stir fried vegetables. I usually add a little extra dash of soy sauce so the soup doesn’t get the watery taste to it. You can also squeeze in a little lemon and grate up some extra ginger in the soup if you feel like adding more taste to the soup broth.

As the noodles are spicy, you want to match them with something mild so it balances up the hot.
