  • 1 cup warm water between 100-105 degrees Fahrenheit
  • 1 tablespoon active dry yeast DO NOT USE Rapid-rise or Instant yeasts
  • 1 teaspoon sugar
  • 1 tablespoon quality olive oil
  • 2 1/2 cups all purpose flour I include a little extra just in case the dough gets sticky + for kneading
  • 1 teaspoon salt

  • Bloom the yeast in warm water (make sure it's not too hot!) and add a teaspoon of sugar. Set aside for 5-10 minutes, until you see some foam or bubbles rise to the surface.
  • Add the olive oil and 2 cups of flour in a separate bowl, then pour in the yeast that has bloomed. Blend for about 30 seconds, then add the salt. (if your salt touches the yeast directly, it may not rise properly so add it in with the flour). Continue to mix the flour mixture by hand or in a mixer at low speed until the dough is blended.
  • Pour the doughy mixture onto a lightly floured surface, and knead the dough for 5 minutes by hand (2-3 minutes in a mixer), or until smooth. If the dough is too sticky, add small amounts of flour (about a tablespoon) at a time until smooth. Do not overknead the dough or it will get tough!
  • Transfer the dough to a bowl that's been coated with a light coating of olive oil. Cover the bowl with a towel or plastic wrap.
  • While the dough is rising, prepare your favorite toppings to use.
  • Allow the dough to rise in a warm place until it doubles in size (approximately an hour up to 3 hours).
  • Preheat the oven to 450 degrees Fahrenheit.
  • Once the dough has doubled, use a little flour and knead the dough to loosen it up.
  • Stretch out the pizza dough over parchment paper. You can use a rolling pin or your hands, but be careful not to tear the dough.
  • When the dough is stretched, add the sauce and the toppings.
  • Cook the pizza 20-25 minutes on the middle rack of your oven, or until the cheese is melted or golden. If you are making two smaller pizzas, check them in 15-20 minutes and take them out if they're bubbly and golden.

If you have leftover cooked pizza, just store it in an airtight container and enjoy it the next day. It lasts up to 3 days in the refrigerator - just reheat at 400 degrees Fahrenheit for 10 minutes.
